Pizza my heart

Updated: Apr 21, 2020

Adam and I met while working at a pizza restaurant in our home town back in Georgia, so you can say pizza brought us together. Since then we've been perfecting our pizza dough recipe & we're ready to share to it!

Who doesn't like pizza?!? I don't care to know them. Pizza is a staple in our household & I like to think that homemade makes it healthier? Either way you can't keep us from stuffing our faces with pizza on the weekly. We've tried wild toppings from left over pork chop dinner with sweet potatoes and pickled grapes, alll thrown on top of a bed of mozzarella to the classic hand tossed pepperoni. No matter what we have in our fridge, we manage to make a tasty pie.

You better cut the pizza into four slices because I'm not hungry enough to each six. ~Yogi Berra

We start with 1/4 cup warm water and 2 tsp + 1/4 tsp (1 packet) of active dry yeast. You want to activate the yeast with the warm water, stir the yeast into the water with a fork. Wait 5-10 minutes until the yeast is active, you will see foam rise. Add 3/4 cup of cold water after yeast is active. Stir together

*We like to use a small measuring cup to do this in, easy clean up and easy to pour into your bowl.

*Use a fork to stir yeast, yeast will clump on spoons.

*We use so much yeast that we bought bulk on amazon then separated the bullk into jars. Store in fridge once opened, it's alive!!

Grab your stand mixer with dough hook or arms of steel.

*dough hook on a stand mixer makes life SO much easier. It can be done in a bowl if you have the strength of god within you & stretch armstrongs genes.

Add 1 cup of all purpose flour, 1 cup bread flour, pinch or so of salt.

Add the yeast water into the dry mix, lower your dough hook and blast off.

We like to let the mixer go for 5 minutes after the dough is throughly combined. There shouldn't be any flour on the bottom of the bowl.

*if dough is too wet add a flour a little at a time.

*if dough is too dry, add a small amount of water.

After dough is well combined, grab off hook, ball the dough in your hands, lightly tossing it from hand to hand. Check out our video to see our technique.

Add a small amount of olive oil to the bowl, add dough then cover.

We like to let ours sit out for 20-30 minutes then transfer to the fridge for 30 more minutes.

Once the dough is goood to gooo, add some flour to your work surface and split the dough in half.

Shell out the dough by making small impressions around the outside to create a crust.

Press the center of the dough flat with your hand while turning the dough, pick up the dough and stretch with all 10 fingers. *Check video for technique!!

Once dough is flattened, put dough on pan that you're baking it on.

*This way you don't have to transfer after adding sauce and toppings.

Add sauce and any desired toppings! Get funky, everything is good on pizza!!

Bake at 450 degrees for 14 minutes rotating the pizza half way through.

*for thin crust pizza, skip the crust step. No small impressions!
