MUSHROOM DIP SANDWICHES

Coming from a newer fan of mushrooms... these are a big WOW !!!


We've been eating meatless for 8 months or so now. I'm constantly trying to find tasty "meaty" meals that will leave my husband feeling full & happy. When I saw this mushroom sandwich idea I knew it would be a hit- I mean come on.. crispy bread and melted cheese with anything is a home run. Personally I've never been a fan of mushrooms. Actually "not a fan" doesn't cover the hatred I had for those gooey stanky veggies. BUT! My magical husband made beef wellington for Christmas 2 years ago & finally I came to terms with my grown up taste buds. Now, I love all mushrooms &

I. MEAN. ALL. MUSHROOMS.


Okay I'll get to the reason we're all here.

A U . J U S . D I P . S A N D O S



First off you'll need the following list of ingredients.

You can add, subtract or multiple any and all ingredients to fit your taste,

this is just what we like - -


crispy bread

1 portobello mushroom cap

1 pack of portobello small shrooms

1 yellow onion

2 jalapeno peppers

1/3 cup Worcestershire sauce

dash of liquid smoke

1/2 cup veggie broth

garlic to your liking

2 T butter or oil

salt & pepper

thyme

cheese *optional*




Start by chopping your onion, peppers & garlic




Once chopped, heat a pan on medium heat and throw in your butter or oil.

We're caramelizing onions y'all.


When your onions are looking pretty caramelized, add in the peppers!

Throw your onion & peppers back on the stove until the peppers are sautéed.


When your onions & peppers are cooked to your liking,

move to a bowl or plate then grab your shrooooms!

Cut the small portobellos into thin slices.

Cut the portobello cap into thicker slices for a meaty texture.



Back to the stove!

Add oil or butter to the pan then throw in your shrooms, garlic & a pinch of thyme



Saute your mushrooms until they are cooked through. (~5 min)



Once your mushrooms are cooked, add your onion & pepper mix to the pan.



At this point you can mix together all your liquid ingredients.

Grab a measuring cup, 1/3 cup Worcestershire sauce and a dash of liquid smoke. Over low heat, pour that mixture over your veggies in the pan.

"Scrape the pan" to get all the cooked bits off the bottom & you're good to go!

Now you'll need to use some multi-tasking skills.

You'll need to get the liquid from your pan into a bowl.

Hold your veggies back with a spatula as you pour the liquid.




When you have the liquid from your pan, in your bowl,

now you can add veggie stock to thin out the sauce.



Y'ALL!!

That's it.


Put together your au jus dip sandwich however your heart desires.

We toasted our bread, added the veggie mix then topped with a little cheese.

Dip & enjoy!!
