Who knew that making hot sauce could be easy, fun & freaking addicting! This serralapeno hot sauce is one of our all time favorites.
We started by fermenting serranos and jalapeños for 2 weeks. Personally, fermenting peppers sounded intimidating so I was happily surprised when it was a piece of cake.
Start by cutting your peppers in half and taking all the seeds out then add to jar.
Make a water / salt solution using water and 5% salt. Pour into your jar.
That's it! If you have an air lock, put that sucker on. If not, put your lid on and "burp" the jar whenever you think about it.
*"burping" is just opening the lid to release the gas/ bubbles!
Once your peppers are all bubbly and fermented, you're ready to make some hot sauce! The brine will get cloudy and the smell should be funky but not moldy.
*Our peppers grew kahm yeast on the top while we were fermenting. At first we thought it was mold and freaked but thankfully it was just some kahm yeast. We scraped off the top and we were good to go.*
Grab your blender, white vinegar, & peppers.
You'll want to start by straining your peppers but make sure to save the brine (liquid)!! The liquid will be gradually added back to the blender in a minute.
Now put your peppers in the blender & start pulsing/chopping them up. You want to get the peppers as small as possible without turning them into a sauce.
When your peppers look nice and chopped, start slowly adding the brine back into the blender.
Then you can add 1/3 cup of white distilled vinegar, while the blender in still blending away. The peppers and vinegar will combine to make a thin sauce. It should look similar to this- -
You're ready to bottle this up! We like to save all the bottles we can. Thankfully we have some left over Frank's Red Hot bottles that are perfect for fermented hot sauce. We also have this little funnel that makes life a lot easier. Whatever is the easiest way for you to get the sauce into the bottle, do that.
